Lemon Rice

Ingredients:

 1 cup Leftover cooked rice
 1 tbsp Channa dal (Soak in boiling water for 10 min)
 1 tbsp Urid dal (Soak in boiling water for 10 min)
 1 Onion (Medium – chopped )
 1 tbsp Turmeric powder
 1 Lemon juice
 Curry leaves
 2 Dry red chilli
 ½ pinch Ginger grated
 1 tbsp Mustard oil or any other oil of your choice (Handful and chopped)
 Coriander leaves (Handful)
 Peanuts (As per your taste)
 Salt
 Brown sugar (As per your taste)

Directions:

Heat the rice a bit and add salt, brown sugar and lemon juice to it and mix it well

Heat a pan and add oil to it. When oil is hot, add mustard seeds, dry red chillis and grated ginger, soaked channa and urid dal and fry for some time. Do not let it burn.

Add curry leaves and when it is crispy, add turmeric to it and mix well.

Add rice to it and mix well.

Add chopped coriander leaves.

Dry roast peanuts in a separate pan ensuring that you do not burn it then add it to the rice and mix it well.

Serve it hot.
